This bean utilises a unique processing method introduced by the farm's owner, Jairo Arcila. The innovative approach known as iced fermentation consists of meticulous steps such as dry anaerobic fermentation for 24- 48 hours, then placed in a limited oxygen environment for 50-60 hours and finally frozen for another 72 hours.

The results?
This bean possesses a prominent molasses flavour and a medium-level acidity, creating a taste profile that sits just right on the palate.
